HH Ackee and Bacon Puffs

Bacon. Bacon. Bacon.


Our Hanover House family loves to add bacon to style the traditional Ackee and Saltfish dish. But not only do we add bacon, we use a Jamaican household staple - sliced bread - to create this fun recipe.

Ingredients

Serves 2-4 persons


1 can 540g/19oz Hanover House Ackee (Drained)

8-10 strips of Bacon – chopped in 1” pieces

½ cup chopped onions

½ cup chopped bell peppers

½ cup chopped escallions

½ cup diced tomatoes

1 small piece finely chopped scotch bonnet pepper

2 sprigs thyme

1 1/2 tbs cooking oil

12 slices of your favourite sliced bread

Salt & black pepper to taste


Method

Heat pan/skillet and pour in ½ tbs oil. Add bacon & fry until semi crispy

Drain oil from bacon and set aside

Reheat pan/skillet, pour in 1 tbs oil, add all chopped seasonings and toss for 2 minutes

Add bacon pieces and toss for 1 minute


Add ackee and gently incorporate with the other ingredients for 1 minute

Add salt & black pepper to taste



Method for Puff Cups

Lightly grease a 12 cup muffin pan

Shape each slice of bread into the muffin cups

Fill bread cups with the Ackee and Bacon mixture

Toast in a toaster oven for 5 minutes or until bread is toasted

Serve and enjoy!
