HH Ackee and Saltfish

Ackee and Saltfish is the national dish of Jamaica, satisfying the souls and stomachs of Jamaicans at home and abroad. Our Hanover House Ackee and Saltfish recipe is our taste of home, made with love by our matriarch Marcia Valerie and passed down to her family. We are honoured to share this and other recipes with you.


Ingredients

Serves 2-4 persons

1 can 540g/19oz Hanover House Ackee (Drained)

6 oz skinned & deboned Cod Fish (previously soaked in water overnight)

½ cup chopped onions

½ cup chopped bell peppers

½ cup chopped escallions

½ cup diced tomatoes

1 tbs cooking oil

1 small piece finely chopped scotch bonnet pepper

2 sprigs thyme

Salt & black pepper to taste


Method

Heat pan/skillet, pour in oil, add all chopped seasonings and toss for 2 minutes.


Add salt fish and cook for 2 minutes while tossing the mixture.


Add ackee and gently incorporate with the other ingredients for 1 minute.

Add salt & black pepper to taste.

Serve and enjoy!
